Chicken & Pork Adobo


900g Pork belly or shoulder cut into chunks

1 chicken cut into serving portions

40g minced garlic

375ml vinegar

375ml water

1 bay leaf (optional)

2 tablespoons salt

125ml oil

60ml soy sauce

4 medium tomates

Serves 8-10 Preparation time: 10mins Cooking time: 1hr

How to make chicken & pork adobo

  1. Put the pork & chicken in a large casserole. Sprinkle garlic over the pork & chicken. Combine vinegar & water & pour into the casserole. *Dont use an aluminium casserole as the vinegar will react with the vinegar)
  2. Bring to boil without stirring then simmer over low heat & add the bay leaf. Add salt & simmer down till the meat is tender, about 30mins. Remove the meat from the casserole & reserve any liquid.
  3. Heat the oil in a wok & cook the pork & chicken in batches until browned. Remove the pork & chicken & place in a serving dish.
  4. Mix the soy sauce & reserved liquid. Pour over the meat. Serve with hot rice & chopped tomatoes or with the tomato & mango relish.
