900g Pork belly or shoulder cut into chunks
1 chicken cut into serving portions
40g minced garlic
1 bay leaf (optional)
2 tablespoons salt
60ml soy sauce
4 medium tomates

How to make chicken & pork adobo
- Put the pork & chicken in a large casserole. Sprinkle garlic over the pork & chicken. Combine vinegar & water & pour into the casserole. *Dont use an aluminium casserole as the vinegar will react with the vinegar)
- Bring to boil without stirring then simmer over low heat & add the bay leaf. Add salt & simmer down till the meat is tender, about 30mins. Remove the meat from the casserole & reserve any liquid.
- Heat the oil in a wok & cook the pork & chicken in batches until browned. Remove the pork & chicken & place in a serving dish.
- Mix the soy sauce & reserved liquid. Pour over the meat. Serve with hot rice & chopped tomatoes or with the tomato & mango relish.
