Creme Caramel (Leche Flan)


1 cup dark brown sugar

60ml water

6eggs + 2 yolks

300g sugar

375ml cream or evaporated milk

2 tablespoons lime or lemon zest (optional)

4-5 thin slices of lime to garnish (optional)

serves 4 preparation time 15mins + 3-4 chilling time Cooking time: 1hr

How to make creme caramel

  1. Combine sugar & water in a saucepan. Allow the sugar to melt over low heat until a syrup forms. Pour immediately into a loaf pan or casserole. Swirl the pan or dish to coat the bottom evenly. Set aside.
  2. Lightly beat eggs & egg yolks into mixing bowl. Add sugar & cream/evaporated milk & stir. Strain the mixture into the loaf pan or casserole. Stir in the lime or lemon zest.
  3. Cover the pan or dish with aluminium foil. Place in a steamer for about an hr or until the caramel is firm to the touch. Set aside to cool.
  4. To serve, run a spatula or knife along the edge of the pan or dish to loosen the caramel. Turn out onto a serving plate & garnish with lime slices, if desired.
